INGREDIENTS 4.5 LB ( 1.59 Kg } Lamb shoulder, cut in medium size 1 Tbs Coriander 1 Tsp Cumin 1 1/2 Tbs Garam masala 1 Tsp Turmeric 1 Tsp Chili powder 1 Tsp Kosher salt 1 Tsp Ground black pepper 2 Bay leaves 1 Tbs Garlic, chopped 1 Tbs Ginger, minced 3/4 C Plain yogurt 2 Ripe tomatoes, diced 1 Cup Cilantro, chopped { For all steps } 1/2 C Fresh mint, chiffonade { For all steps } 2 Large Red onions, thinly sliced and fried 1 Lemon zested and juiced 1 Jalapeno, slit and deseeded More Salt and pepper to taste or as needed FOR BASMATI RICE 2 Q Water, boiling 2 Tbs Kosher salt 2 Cinnamon sticks 2 Star anise 2 Black Cardamom pods 1/2 Tsp Cumin seeds 1 Tsp Coriander 1 Tsp Black pepper corns 1Tbs Vegetable oil 2 Bay leaves 3 C Basmati rice, rinsed until water is clear.
