This creamy chicken is so good, my nod to the widely popular Tuscan Chicken recipe. The ultimate comfort dish, rich and full of delicious flavors for a weeknight dinner or entertaining family or friends. The recipe uses readily available ingredients. INGREDIENTS 2 Tbs Cooking oil , am using grape seed oil, olive oil is ideal 2 Lb. Chicken , thighs and drums, patted dry and trimmed excess skin and fat 1 Medium Yellow onion peeled and diced 1 Tbs Garlic, chopped 1 Tsp Tomato paste 1/2 Tsp Dry thyme 1 Sprig fresh rosemary ( 1/4 Tsp dry ) 1 Tsp Dry oregano 2 Cups Tomato medley, cut in halves 1 Yellow/ Orange bell pepper, sliced 1 Red bell pepper, sliced 1/2 Cup cooking wine or your fav bottle 2 Cups chicken stock 1/2 Cup heavy cream 1/2 Cup Grated Parmesan cheese 2 - 4 Cups Baby spinach Parsley for cooking and garnish Salt and pepper to taste, always taste and season as you go
