For this recipe you beef chuck roast or any beef suitable for long cooking. INGREDIENTS 3 lb. Beef chuck pot roast, cut into medium bite size pieces 1 Yellow onion, peeled and diced 1 tbs Garlic 1 tbs Ginger, minced 1 tbs curry powder 1 tbs coriander 1 tsp cumin 1 tsp turmeric 1/2 tsp chili powder ( or more to your taste ) 1 tbs tomato paste 1 large bay leaf or 2 small 4 cups water or beef stock 1tbs lemon juice 1 small bunch cilantro, chopped for cooking and garnish 6 - 8 Potatoes, medium sizes, peeled and quartered 2 carrots , peeled and cut bite size 1 Yellow bell pepper, cut bite size 1/2 small green cabbage Salt and pepper to taste.
