This Pork Tenderloin is juicy and tasty. This dish comes together so easily and is perfect on any day of the week. Once the Pork tenderloin is coated with the spice rub ,it goes into a 425 F Oven and ready in just minutes. INGREDIENTS 4.5 Lb. Pork Tenderloin, silver skin removed 1 Tbs Olive oil 2 Tbs Spice Rub Salt and Pepper For the side dish 1/2 cup White onions 1 Tbs Garlic, chopped 1 Tbs Ginger, minced 6- 8 Baby potatoes , I used Yukon golds 1 Cup tri color peppers ( Yellow, red and orange ) 1 Cup Carrots, diced 1/2 cup White onions 1 cup Cherry tomatoes 1 Bay leaf 1/4 cup Cilantro 3 Sprigs thyme ( 1/2 Tsp Dried herbs ) Pinch red pepper flakes 1 cup water or vegetable stock 1 cup Frozen peas. 1 Lemon zested and juiced
