Hey friends Today am sharing with you this uniquely Kenyan recipe, Kuku Paka or Chicken cooked in coconut milk and spices . I enjoy to make this dish all the time and reminds of Mombasa restaurants. Its a recipe that's easy to make at home and the result is a very delicious and comforting dish with an aromatic flavor. INGREDIETS 4lb. Chicken , I used thighs and drumsticks for this recipe 2 Tbs Vegetable oil Salt and pepper 1 Medium Yellow onion, peeled and diced 1 Tbs Garlic, chopped 1 Tbs Ginger, minced 1 Tbs Coriander 1 Tsp Cumin 1 Tsp Chili powder 1 Tsp Turmeric 1 Tsp Paprika , optional 1 Tsp Tomato paste 2 Bay leafs 3 Ripe medium Roma tomatoes, diced 1 Can coconut milk ( 400ml ) 1/2 c Chicken stock or water To Finish 1 Tbs Greek or plain yogurt 1 Tbs Lemon juice 1/4 c Cilantro, chopped Salt and pepper as needed.
