Chicken thighs, bone in, skinless 1Cup Red onions ,diced 1 Tbs Garlic, chopped 1 Tbs Tomato paste 4 Cups Chicken stock or water 1 Tsp Fresh thyme, chopped 1/2 Tsp Fresh rosemary , chopped 2 Bay leaves 1 Tsp Paprika Pinch red pepper flakes 4 Small sweet potatoes, peeled and cut into medium cubes 2 Medium carrots, peeled and cut into bite size 2 Bunches Collard greens or kale, washed and cut 1 can ( !5.5 oz) (439g)White beans ( Cannellini ), drained and rinsed 1 Tsp Red wine vinegar or lemon juice Salt and black pepper to taste Parsley, chopped for finishing and garnishing
